Ingredients: Unbleached wheat flour, cornmeal, rye flour, rolled oats, sugar, baking powder, milled flax seed, salt, and baking soda.

If you choose the Waffle recipe (with a little melted butter, see below) you will be rewarded with a light yet crispy waffle that will make you want more!

Here's all you do: Into 1 cup of mix, stir in 1 egg and add milk to desired consistency (normally less than 1 cup). Heat griddle to 360, melt a little butter on griddle and pour 1/4 cup batter over buttered area. Turn when batter forms bubbles.

For Waffles: Use 1 cup of mix, 2 Tbs. melted butter and 1 cup whole milk. Let stand 5 minutes before cooking.

For delicious Dinner Pancakes: Italian ham and cheese are a brilliant way to transform a kid-friendly breakfast food into a dinner that will please any grown-up. It's as simple as: 

stirring a half-cup each of diced prosciutto and shredded mozzarella into Strawberrytree Farms batter (use a cup of mix, 3/4 cup milk, 1 tablespoon oil and 1 egg). Cook the pancakes as you normally would, and finish with sliced tomatoes and a drizzle of extra-virgin olive oil.

Then, just add whatever cheese and toppings you want, then pop your pancakes into an oven set to broil for 1-3 minutes (or however long it takes to melt the cheese).This will quickly become a favorite when something quick is needed. Just remake and store pancake batter.

Step 1: Measure your ingredients. For each cup of flour that the recipe calls for, reduce the amount by 2 1/2 tbsp. to account for the sugar and leavening agents that the pancake mix includes.

Step 2:  Reduce any other ingredients proportionally (eggs, water or milk, etc).

Step 3:  Do not add in further leavening agents, such as baking powder and baking soda. Do not add in any extra sugar, unless you want a particularly sweet recipe.

Step 4:  Follow all directions for mixing ingredients and baking.
