Award Winning Zucchini Bread

Another example where the quality of your cooking is not diminished, only enhanced, because we have done some of the preparation for you. Here is a comparison of making our recipe with our mix with one that we like from Jessica & Nellie, who have a site that is great: 

Ingredients and directions for their's:

  • 1 cup white sugar
  • 1 cup brown sugar
  • 3 eggs
  • 1 cup vegetable oil ( can substitute apple sauce)
  • 3 tsp vanilla extract
  • 3 cups all purpose flour
  • 1 tsp nutmeg
  • 3 tsp ground cinnamon
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 tsp baking soda
  • 2 cups grated zucchini
  • 1 cup chopped walnuts 
  1. Grease 2 8 x 4 inch pans or 6 mini loaf pans. Preheat oven to 325 F
  2. Mix flour, salt, baking powder, soda, nutmeg, and cinnamon in bowl
  3. Beat eggs, oil, vanilla, and sugar in large bowl ("sneak in some flax")
  4. add dry ingredients and beat well
  5. grate zucchini, stir into mixture.
  6. pour into prepared pans. Bake 40 - 60 minutes or until tester comes out clean
  7. cool in pan for 20 minutes, remove and enjoy

Ingredients and directions for ours:

  • Award Winning Zucchini Mix(which contains flaxseed already)
  • 1/2 cup water
  • 1/2 cup melted and cooled butter
  • 1/2 cup vegetable oil
  • 3 cups grated zucchini ( squeeze in clean kitchen towel until most liquid absorbed
  • 1/2 cup walnuts and/or raisons (optional)
  1. Blend water, melted, cooled butter and vegetable oil & fold into mix until creamy
  2. Fold in grated zucchini and walnuts, raisons (walnuts, raisons optional)
  3. Evenly pour into 2 well greased 4x8 loaf pans.
  4. Bake at 350 F for 60 - 70 minutes or until tester comes out clean. Cool 10 min. Remove and let set for additional 30 min. before serving
