Bean & Barley Soup

Here's all you do: In a large pot add 1 (15oz) can beef broth, 4 cups water, a 15oz can of drained white beans, a 15oz can of drained mixed vegetables (or 12oz frozen mixed vegetables), and a 15oz can of tomato sauce (or diced tomatoes). Whisk in soup mix and bring to a boil, stirring occasionally to prevent sticking. Reduce heat to a simmer and cook uncovered for 40 minutes. Let cool to thicken for 15 minutes.
If you want it thicker use 3 cups of water instead of 4
Make it "heartier" by adding 8oz sautéed ground beef or turkey, or browned and cooked stewing beef.
Make it spicier by adding a touch of our Mexican HURCHA seasoning (see on this site).
