Homemade Cesar Salad Dressing

This Caesar salad dressing recipe is really simple and very easy to make in no time at all. Total prep time: 10 minutes. Servings: 1 cup

Ingredients:

  • 1/2 cup olive oil
  • 2 tbsp mayonnaise
  • 1 Tbsp Dijon mustard
  • 2 Tsp Go Go Garlic (to taste)
  • 1/4 cup fresh grated parmesan cheese
  • 1 tsp anchovy paste (more or less depending on taste preference)
  • 2 tbsp fresh lemon juice
  • 2 tsp Worcestershire sauce

Reserve the olive oil.  In a glass bowl, whisk together all remaining ingredients  until smooth and creamy. Slowly drizzle in the olive oil, while continuously whisking.

Do not add the olive oil in too quickly, as that can break the emulsification process. Instead, go slow and easy, drizzling the olive oil into the mixture to make sure it emulsifies properly before adding more oil. You may wish to use a hand mixer or food processor set to low speed to make this process easier on your nerves. 

Continue to drizzle and whisk until all the oil has been added. Store in a sealed container for up to one week.
